It’s officially autumn and it’s time to savor the pumpkin things of life. Whole Foods started placing their fall foods out in September. I’ve complied a list of autumn friendly plant based foods, including some produce.

It’s officially autumn! While everyone is going pumpkin spice crazy, I LOVE all things sweet potato! Which brings us to these Sweet Potato Brownies. They’re just like regular brownies, but filled with sweet potato purée creating a richer and healthier dessert that still hits that sweet spot! It’s also perfect for autumn since sweet potatoes and in season. Scroll down to get into the recipe!

🍠🍫 Fudgy Sweet Potato Brownies

Rich, chocolatey, fudgy brownies made with sweet potato, cacao, organic cane sugar, and plenty of chocolate chips. A cozy plant-based treat that's simple to make and seriously delicious!

Ingredients

  • 1 medium sweet potato, cooked and mashed (about 1 cup)
  • all-purpose flour
  • Cacao powder
  • Organic cane sugar
  • Vegetable oil
  • 1½ teaspoons vanilla extract
  • Arrowroot powder
  • ½ teaspoon salt
  • ½–¾ cup plant-based milk, if needed
  • 1 cup vegan chocolate chips
  • Nut butter or apple butter
  • Extra chocolate chips for topping, optional

Instructions

  1. Preheat oven to 350°F. Lightly oil your paper baking pan.
  2. Cook the sweet potato until very soft. Let it cool slightly, remove the skin, and mash until smooth.
  3. In a large bowl, whisk together the flour, cacao powder, arrowroot powder, and salt.
  4. In a separate bowl, mix the mashed sweet potato, cane sugar, oil, vanilla extract, and ½ cup of plant milk until smooth.
  5. Add the dry ingredients to the wet mixture and stir until combined. Add additional plant milk, 1 tablespoon at a time, if the batter is too thick. The batter should be thick but spreadable.
  6. Fold in the chocolate chips.
  7. Spread the batter evenly into the prepared pan and smooth the top. Add extra chocolate chips if desired.
  8. Bake for 25–35 minutes, checking around the 25-minute mark. The center should be set but still soft.
  9. Allow the brownies to cool completely before slicing. They will firm up as they cool and become extra fudgy.

Serving Suggestions

  • Serve warm with vegan vanilla ice cream.
  • Drizzle with melted vegan chocolate.
  • Top with fresh berries.
  • Enjoy with coffee, hot chocolate, or your favorite plant-based latte.

Recipe Notes

These brownies are meant to be dense and fudgy rather than cakey. Letting them cool completely helps them set and makes them easier to slice. Store leftovers in an airtight container.

🍠🌱 Plant-based • Fudgy • Chocolatey • Cozy
